Easy Special K Bars (Guest Post)

Good morning! This morning, we have a guest blogger joining us. Her name is Maria Rainier, and she’s sharing her recipe for Easy Special K Bars, which sound delicious. I can’t wait to give them a try. :)

Easy Special K Bars

There is nothing like an easy recipe that is so good, you get a request for the recipe every time you make them! I combined all of my absolute favorite flavors with the healthiest cereal I could find only to end up with the best cookie bar I have ever put in my mouth, seriously. I don’t mean to sound cocky, but I have to admit, when I’m craving something sweet, nothing beats this dessert and if you like chocolate, peanut butter and butterscotch, this is going to be YOUR new favorite too!

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 6 cups Special K cereal
  • 1 bag semi-sweet chocolate chips
  • 1 bag butterscotch chips

Over high heat, combine sugar and corn syrup. Stirring consistently, bring to a boil and allow to boil (while stirring) for a couple of minutes. Remove from heat and stir in peanut butter until smooth. Add Special K cereal and fold well. Pour into greased 9 X 12 pan and press until even. Over low to medium heat, mix both bags of chips together and stir well until melted and smooth. Pour and spread evenly over the top of the bars. Cool and eat!!

Wow, this sounds amazing. Margo, I think you should make it and send me some. I’m def going to try this when I get home from college.

They do sound good, but you’ll probably be home to make them (and share with me?) before I get the chance to try them. :)
